This was another one of my mothers. I don't know where it came from but we think it is good. Ingredients:
1 1/4 cups boiling water |
1 cup quick oats |
1/2 cup shortening (i use oil) |
1 cup white sugar |
1 cup brown sugar |
2 eggs |
1 teaspoon vanilla |
1 1/3 cup flour |
1 teaspoon soda |
1 teaspoon cinnamon |
1/2 teaspoon salt |
Directions:
1. Pour boiling water over the oats. Let stand 20 minutes. 2. Cream shortening, white sugar, brown sugar. 3. Mix with the oats. 4. Add eggs and vinalla. 5. Sift together and add to the above flour, soda, cinnamon, salt. 6. Bake in 9 by 13 pan 25 minutes at 350 degrees or until done. 7. Then put on topping. 8. Topping 9. 1 cup brown sugar 10. 1/2 cup cream 11. 1 cup coconut 12. 4 tablespoons margarine, melted 13. Mix and put on top of cake. 14. Broil until it bubbles. |
