This is a moist, rich cake that will keep well. I think you will enjoy this.. Ingredients:
1-1/4 cups boiling water |
1/2 cup butter or margarine |
1 cup oatmeal (quick cooking) |
1 cup white sugar |
1 cup brown sugar |
2 eggs |
1/2 teaspoon nutmeg |
1 teaspoon baking powder |
1 teaspoon baking soda |
1/2 teaspoon salt |
1 teaspoon cinnamon |
1-1/3 cups flour |
topping |
6 tablespoons soft butter or margarine |
1 cup nuts |
1/2 teaspoon vanilla |
1/2 cup sugar |
1/4 cup milk |
1 cup coconut |
Directions:
1. Pour boiling water over oatmeal and butter. Let mixture stand for 20 minutes. 2. Add sugars and eggs; mix well. Add sifted dry ingredients and blend well. 3. Pour into greased and floured 9 x 13 x 2-inch pan. 4. Bake at 350 degrees for 35 minutes. 5. Blend all topping ingredients together. 6. Spread on top of cake as it comes out of the oven. 7. Place cake back in oven and broil just until coconut browns. Do not overcook the topping. |
