This is one of my family's traditional cakes. It's quick, easy, and delicious. And it's a good (and fun!) way to eat oatmeal. Ingredients:
1 1/4 cups water |
1 cup quick oatmeal |
1/2 cup oleo (or margarine) |
1 cup sugar |
1 cup brown sugar |
2 eggs |
1 teaspoon vanilla extract |
1 teaspoon baking soda |
1 1/2 cups flour |
1 teaspoon salt |
2 tablespoons oleo, melted (or margarine) |
1/2 cup brown sugar |
1 1/2 cups chopped pecans |
1/4 cup evaporated milk |
1 teaspoon vanilla extract |
Directions:
1. Bring the water to a rolling boil and pour it over the oatmeal; let stand for 20 minutes (DO NOT DRAIN). 2. Preheat oven to 350°F. 3. Add the oleo and sugar, and then add the eggs and vanilla; beat well. 4. Add the baking soda, flour, and salt; mix until smooth. 5. Pour the batter into a 9x12 loaf pan. 6. Bake at 350 F for 35-40 minutes. 7. Topping:. 8. Mix the ingredients together and apply to cake while hot. 9. Put the cake under the broiler until the top is golden brown. |
