This recipe comes from my mother-in-law. Ingredients:
1 cup oatmeal |
1/2 cup butter |
1 1/2 cups water, boiling |
2 eggs, beaten |
1 cup white sugar |
1 cup brown sugar |
1 1/3 cups flour, sifted |
1 teaspoon cinnamon |
1 teaspoon baking soda |
1/2 teaspoon salt |
1/2 teaspoon nutmeg |
1 cup brown sugar |
4 tablespoons milk |
6 tablespoons butter |
1 cup coconut |
1/2 cup nutmeats (optional) |
Directions:
1. In pan boil water add butter; stir in oatmeal and let stand 20 minutes. 2. Pour into mixer bowl and add eggs and the first two sugars; mix. 3. Add flour, cinnamon, baking soda, salt and nutmeg. 4. Mix well. 5. Put into a 9x13-inch pan. 6. Bake at 350 degrees for 35 to 40 minutes. 7. Frosting-. 8. Boil the three ingredients for the frosting for 1 minute. 9. Add coconut and nutmeat. 10. Let stand. 11. When you take cake from oven put the frosting on cake. |
