Oatmeal Butterscotch Cookie |

I have made this for many years and I like to make them if my husband has to be away on business. Gives him something to munch on either on the plane or in his hotel room. Ingredients:
3/4 cup(1-1/2 sticks) butter, softened |
3/4 cup granulated sugar |
3/4 cup packed brown sugar |
2 eggs |
1 tsp. vanilla extract |
1-1/4 cup all purpose flour |
1 tsp. baking soda |
1/2 tsp. ground cinnamon |
1/2 tsp. salt |
2 cups quick cooking oats |
1 (10oz) bag butterscotch chips |
Directions:
1. Preheat oven to 375 degrees. 2. In a large bowl, beat butter, sugar & brown sugar until blended. 3. Add eggs & vanilla, beat well. 4. In another bowl stir together flour, baking soda, cinnamon & salt. 5. Gradually add to the butter mixture, beating until well blended. 6. Stir in the oats & butterscotch chips, mix well. 7. Drop by heaping teaspoons onto ungreased cookie sheet. 8. Bake 8-10 minutes or until golden brown. 9. Cool slightly on the pan, then move to wire rack to cool completely. 10. This recipe could make about 3 or 4 dozen, just depends on how big you want the cookies. I tend to make mine bigger, so I usually don't yield that many. |
