Oatmeal Brown Sugar Muffins |

Adapted from a recipe in the book Sleep On It Ingredients:
1 cup all-purpose flour |
1 cup light brown sugar |
1 cup rolled oats |
1 teaspoon baking powder |
1/2 teaspoon salt |
1 cup low-fat sour cream |
5 tablespoons butter, softened |
2 large eggs |
nonstick cooking spray |
Directions:
1. Mix together the first five ingredients (the dry ingredients) in a medium bowl. 2. In a separate bowl combine the next three ingredients (the wet ingredients) and mix well. 3. Stir the wet ingredients into the dry ingredients. Blend well. Cover and refrigerate overnight. 4. Preheat the oven to 375 degrees F. Divide mixture into a 12-cup muffin pan that has been sprayed with the nonstick spray. 5. Bake for 20 to 30 minutes, until a toothpick inserted in the center of one muffin comes out clean. Allow to cool slightly before removing muffins from the pan. |
