a 104 calorie hearty muffin. Very dense in texture but with only 1 percent fat. Great in the morning. Use whatever fruit you wish to make different types of muffins.
Ingredients:
2 1/2 cups flour, whole wheat
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1 cup oatmeal
3/4 cup splenda
1/3 cup applesauce
1/2 cup egg substitute
1/2 cup skim milk
1 1/2 cups blueberries
Directions:
1. Combine dry ingredients. Combine wet ingredients. Stir wet into dry until just moistened. Fold in the fruit.
2. Divide between 24 greased, muffin pans. Bake at 350 for about 15-20 minutes.
