Oatmeal Banana Bread Pancakes |

These hearty pancakes are a great way to use up one or two of those ripe bananas sitting in the fruit bowl. Great with maple syrup. Ingredients:
1 1/2 cups all-purpose flour |
1 cup rolled oats |
1/4 cup brown sugar, packed |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
1/4 teaspoon salt |
1 1/2 cups milk |
2 eggs, beaten |
2 ripe bananas, mashed (about 3/4 cup) |
3 tablespoons butter, melted |
2 teaspoons vanilla |
1 tablespoon vegetable oil |
Directions:
1. In a large bowl, whisk together the flour, oats, sugar, baking powder, baking soda and salt. 2. In a separate bowl, whisk together the milk, eggs, bananas, butter and vanilla. 3. Pour over the flour mixture and stir until almost smooth. 4. Let stand for 10 minutes. 5. Heat a nonstick skillet or griddle to medium heat. 6. Brush lightly with some of the oil. 7. Pour in about 1/3 cup batter for each pancake. 8. Cook for about 3 minutes or until the underside is golden and bubbles break on top but do not fill inches. 9. Turn and cook until the underside is golden brown, about 1 minute. 10. Repeat with remaining batter, brushing skillet with more oil if necessary. |
