I searched for 2 years for the perfect Banana Bread recipe and I think this is it!!! Only Banana Bread recipe I found that contains oatmeal which makes a moist loaf that is slightly chewy on the edges like a brownie. Read more . Very yummy! Ingredients:
1/3 cup butter |
1 cup sugar |
1 egg |
1 cup mashed banana (approximately 2 bananas) |
1 cup plain flour (i use unbleached) |
1/2 cup old-fashioned type oatmeal (do not use instant or quick cooking!) |
2 teaspoons baking powder |
1/4 cup chopped walnuts (or pecans) |
1/2 teaspoon salt |
Directions:
1. Cream butter, sugar, egg and bananas. 2. Add baking powder and salt, mix, then add oatmeal & flour. 3. Add the nuts. 4. Spread into a greased glass loaf pan and bake at 350 degrees for about 45 minutes. Check middle with a toothpick, if toothpick comes out clean, it is done. 5. Take out of oven and cover with a tea cloth until cool. 6. Slice and serve. |
