Delicious healthy muffin for a quick breakfast on the run! Ingredients:
1 1/2 cups oatmeal |
1 1/4 cups flour |
3/4 tsp cinnamon |
3/4 tsp nutmeg |
1/8 tsp allspice |
1 tsp baking powder |
3/4 tsp baking soda |
1 cup unsweetened applesauce |
1/2 cup soy milk |
1/2 cup brown sugar |
2 tbsp oil |
1 egg white |
1/4 cup oatmeal |
1 tbsp brown sugar |
1/8 tsp cinnamon |
1 tbsp margarine (melted) |
Directions:
1. In large bowl, combine oatmeal, flour, cinnamon, nutmeg, allspice, baking powder and baking soda. Add applesauce, soy milk, brown sugar, oil and egg white; mix until dry ingredients are just moistened. Fill muffin cups almost full. In small bowl, combine topping ingredients; sprinkle evenly over batter. Bake in 400 oven for 20 minutes or until deep golden brown. |
