the muffins are made with fresh apples instead of apple sauce which gives them a less heavy taste. you get a slightly different flavor depending on the variety of apple used ... the recipe comes from a Goose Berry Patch Cookbook. Ingredients:
1 cup quick-cooking oats, uncooked |
3/4 cup milk |
1/2 cup raisins |
1 1/4 cup flour |
2 teasp. baking powder |
1/2 teasp. salt |
1/2 teasp. cinnamon |
1 egg |
1/2 cup light brown sugar, packed |
1/4 cup oil |
2 apples, peeled, cored and chopped.... use a good cooking apple |
Directions:
1. in a small bowl, combine oats and milk......set aside 2. in a small bowl soak raisins in a little hot water to ''plump'' them 3. drain them before you use them 4. combine in a medium bowl flour, baking powder, salt and cinnamon 5. mix well 6. in small bowl beat egg, brown sugar, and oil until well blended 7. add egg mixture to the flour mixture. stir until well blended 8. stir in oat mixture, apples and drained raisins 9. stir just until blended 10. grease and fill muffin tins 3/4 full 11. bake at 400' F for 15 - 20 minutes 12. ....................................................................... 13. these are great with Brown Sugar and Cnnamon Butter.... recipe to follow |
