Fairly healthy dense muffin Ingredients:
1 cup oats |
1 cup skim milk |
1 cup raisins |
1 teaspoon cinnamon |
1 teaspoon nutmeg |
1/8 teaspoon ground cloves |
3 apples, peeled and diced |
1 egg |
1/2 cup canola oil |
1 cup whole wheat flour |
1 teaspoon baking soda |
1 1/2 teaspoon baking powder |
1 teaspoon vanilla |
1/2 cup brown sugar |
Directions:
1. In a bowl: oats, skim milk, nutmeg, cinnamon, cloves, apples,raisins, brown sugar, and vanilla and let sit for 30 minutes to blend flavors and soften oats. After 30 minutes, add the egg and canola oil. Sift other dry ingredients and add to mix. Divide into 12 muffins, bake in a preheated 350ยบ oven for 20 minutes. |
