These are simple and healthy muffins made from ingredients I always have around the house. I enjoy adding about 1/2 cup Craisins, but I bet they'd be good with other fruits or nuts thrown in, too. This recipe is from the Big Locust Farm Bed and Breakfast in Paoli, Indiana. Ingredients:
1 1/2 cups oatmeal |
1 1/4 cups flour |
3/4 teaspoon cinnamon |
1 teaspoon baking powder |
3/4 teaspoon baking soda |
1 cup applesauce |
1/2 cup milk or 1/2 cup soymilk (to make the muffins dairy-free) |
1/2 cup brown sugar |
5 tablespoons oil |
1 egg (or 1/4 cup egg beaters) |
Directions:
1. Preheat oven to 400 degrees. 2. Combine oatmeal, flour, cinnamon, baking powder and baking soda. 3. Add applesauce, milk, brown sugar, oil and egg; mix until moistened. 4. Put in muffin cups. 5. Bake 20 minutes. |
