Oatmeal and Peanut Butter Cookies |

Chewy, salty, not too sweet! Not quite healthy but not totally bad either. Two cookies per serving with nearly 2 grams dietary fiber and over 5 grams of protein. Makes a pretty filling trail snack. for healthier option substitute applesauce for half of butter(fat). May use shortening for vegans. Ingredients:
1/2 cup applesauce |
1/2 cup salted butter |
1 1/2 cups (naturally more) peanut butter |
2 cups dark brown sugar |
3 eggs |
2 teaspoons vanilla extract |
3 cups rolled oats |
2 cups whole wheat flour |
1 cup almond meal |
2 teaspoons baking soda |
1 teaspoon salt |
Directions:
1. Cream together Peanut Butter and Butter. 2. Cream in Sugar. 3. Blend in eggs and vanilla. 4. Combine dry ingredients in separate bowl. 5. Add dry ingredients to batter in parts, mixing thoroughly. 6. Drop onto cookie sheet, 2 teaspoons per cookie. 7. Bake 350 degrees Farenheit for 12 minutes. 8. Makes 6 Dozen. |
