You'll find Oatcakes wherever you travel in Scotland. Ingredients:
4oz or 125g medium oatmeal, plus some flour and extra oatmeal for sprinkling on your work surface to prevent it from sticking. |
1/2 tsp. baking soda |
1/4 tsp. salt |
2-1/2 tsp. melted bacon fat |
1 tbsp. hot water |
Directions:
1. Preheat the oven to Gas5/375F/190C 2. In a large bowl mix together oatmeal, salt and baking soda. 3. Drizzle the melted fat over and stir well. 4. Cut the mixture into two small balls and sprinkle a work surface with flour and oatmeal. 5. Roll each ball on the surface to coat and to prevent sticking. 6. Knead each ball for a few minutes until it starts to dry slightly and stops sticking to the surface. 7. Add a little more oatmeal as required. 8. Roll each ball into a 1/4 thick disc, then cut into quarters. 9. Place on a greased baking sheet and bake for 30 minutes in the oven or until brown around the edges. 10. Oatcakes can be cooked in a hot frying pan for 3 minutes on each side. |
