This is a recipe I have altered from one of the GI Diet cookbooks. Great for a quick on-the-go breakfast or snack. Will keep for a few days at room temperature, if they aren't eaten first! Ingredients:
2 cups rolled oats (not quick) |
1 cup whole wheat flour |
1/2 cup wheat bran |
1/3 cup splenda sugar substitute |
1/2 teaspoon salt |
1 egg, beaten |
1/2 cup margarine, softened |
4 tablespoons water |
1 tablespoon vanilla |
Directions:
1. Combine all of the dry ingredients. 2. Add margarine to the dry mixture until crumbly. Melting the margarine helps. 3. Add egg, vanilla, and water. Form into a dough. 4. Divide the dough into 16 bars, approximately 1/2 inch thick. 5. Bake at 350F for 15 minutes on a parchment-lined cookie sheet. Flip them over and bake for another 10 minutes. |
