Oat Me Oh My, Healthy Oatmeal Cookies |

These cookies are very versatile. You can use the oatmeal base and then add whatever mix-ins you choose! Ingredients:
1/4 cup splenda granular |
2 tablespoons brown sugar (not packed) |
2 tablespoons pumpkin puree |
2 tablespoons light butter or 2 tablespoons margarine |
2 tablespoons liquid egg substitute |
1/4 teaspoon vanilla |
1/4 teaspoon cinnamon |
1/4 teaspoon baking soda |
1/3 cup whole wheat pastry flour |
1/2 cup oats (not instant) |
2 tablespoons dried sweetened cranberries |
1 tablespoon chocolate chips |
2 tablespoons flaked coconut |
2 tablespoons raisins |
Directions:
1. Preheat oven to 375 F. 2. Combine splenda, brown sugar, pumpkin and butter, egg substitute and vanilla until thoroughly mixed. 3. Add in all the dry ingredients, except oats and add in's . 4. Use a small melon scoop to place cookies about 1 inch apart on a greased cookie sheet. 5. Gently press down on the cookies with a fork. 6. Bake in the oven for 10-12 minutes. |
