Tasty flour free pancakes. Versatile; try as well with added raisins and apple, or banana. Or top it off with frozen and thawed cherries.
Ingredients:
1 egg
1/3 c milk
1 oz oat bran
pinch of salt
2/3 oz grated cheese (preferrably medium-old)
1 ts oil
Directions:
1. whisk eggs and milk with salt. Add oat bran and let it rest for 5 minutes and bake in frying pan. Top it off with cheese. Makes 2 small pancakes or 1 big.
2. Makes 1 grain, 1 fat, 1 protein.
