Muffin Ingredients:
2 1/4 cups oat bran |
1/2 teaspoon salt |
1 1/2 teaspoons cinnamon |
1 tablespoon baking powder |
1 teaspoon vinegar |
1 1/4 cups skim milk |
2 egg whites |
1/4 cup honey |
2 tablespoons oil |
2 teaspoons vanilla |
Directions:
1. In a large mixing bowl, combine the dry ingredients. In a separate bowl blend the wet ingredients. Add the wet ingredients to the dry. Mix until blended. But don't over mix-it should be lumpy. Pour into greased or paper-lined muffin tins, filling htem 3/4 full. Bake at 425 for 12-15 minutes or until golden brown. 2. Option: Add 1/2 cup diced fruit (apples, peaches, berries, banana, raisins) with the wet ingredients for a tasty varaition. |
