Oat and Apple Crumble-Top Muffins |

These muffins are moist, delicious and good for you, too! A great way to use up that one lonely apple that is languishing in your fruit bowl. Ingredients:
1 cup all-purpose flour |
3/4 cup whole wheat flour |
3/4 cup quick-cooking rolled oats |
1 3/4 teaspoons baking powder |
1 teaspoon ground cinnamon |
3/4 teaspoon baking soda |
1/4 teaspoon salt |
3/4 cup milk |
3/4 cup vegetable oil |
1 egg |
2/3 cup brown sugar, packed |
1 teaspoon vanilla |
1 large apple, peeled, cored and diced |
1/3 cup brown sugar, packed |
1/3 cup pecans, chopped |
1/4 cup whole wheat flour |
2 tablespoons butter, melted |
1 teaspoon ground cinnamon |
Directions:
1. To make the topping, stir together the brown sugar, pecans, whole wheat flour, butter and cinnamon; set aside. 2. In a large bowl, whisk the all-purpose and whole wheat flours, oats, baking powder, cinnamon, baking soda and salt. 3. In a separate bowl, whisk together the milk, oil, egg, sugar and vanilla. 4. Pour over the dry ingredients and then add the apple. 5. Stir just to blend. 6. Fill paper-lined or greased muffin cups three-quarters full. 7. Sprinkle with the topping. 8. Bake in the centre of a 375 degree F oven for 25 minutes or until the tops are firm to the touch. 9. Let cool in the pan on a rack for 5 minutes. 10. Remove to the rack to cool completely. |
