Rising to the challenge! Four ingredients were given and I came up with the following dish, adding items normally found in a stocked pantry. Recipe originally intended for the I'll Give You Four, You Give Me More group. Ingredients:

approx 4 cups fresh spinach, washed and dried |
1/2 cup sliced mushrooms |
2 tablespoons fresh lemon juice |
1/4 cup chopped almonds |
supporting cast |
1 tablespoon butter |
3 tablespoons olive oil |
1/4 cup chopped onion |
1-3 minced garlic cloves |
2 tablespoons sugar |
salt and pepper to taste |
Directions:
1. Melt butter in a small pan. Add almonds and sugar and stir over medium-high heat until lightly toasted. Set aside. 2. Meanwhile, heat olive oil, in a large pan. 3. Add mushrooms, onion and garlic. Saute until tender. 4. Add spinach, salt and pepper. Toss spinach until just wilted. Remove from heat. 5. Drain spinach mix and put in serving bowl. 6. Add fresh lemon juice and toss to coat. 7. Sprinkle toasted almonds on top (they are pretty easy to break up if they have stuck together) 8. Serve immediately. |
