Nutty Sauced Banana Boats |

This is so easy to put together, as the sauce can be made ahead and kept refrigerated until ready to use. It makes a nice cool dessert on a hot summer evening. I like the subtle citrus flavor of the sauce combined with the bananas and salty nuts. Ingredients:
3 eggs |
juice of 1/2 a lemon |
1 cup sugar |
dash of salt |
3 bananas, peeled and cut in half lengthwise |
salted peanuts, chopped coarsely (about 2 tablespoons per serving) |
fresh, sweetened whipped cream |
maraschino cherries, optional |
Directions:
1. Combine eggs, juice, sugar and salt in a small saucepan and cook over medium-low heat, stirring, until mixture thickens. 2. Cool the sauce completely and store in a covered container in the refrigerator until ready to use. 3. To prepare dessert, peel bananas and cut them in half lengthwise, placing one half on each individual serving dish. 4. Top bananas with the chilled sauce, then the chopped peanuts, and top with a small scoop of whipped cream. 5. Add a couple maraschino cherries to the top of the whipped cream, if desired...adds nice color, but it isn't necessary for the flavor. |
