Adapted From The New Basics Cookbook. quinoa water golden raisins sesame oil scallions, sliced dry-roasted peanuts with salt canned mandarin orange sections or an orange cut up plus orange juice, fresh mint leaves or parsley orange zest cvt Ingredients:
1 cup quinoa |
2 cups water |
1/2 cup golden raisins |
1 tablespoon (up to 4 tablespoons) sesame oil |
3 scallions, sliced |
75 g (1/2 cup) peanuts, dry-roasted with salt |
1/2 cup canned mandarin orange sections(92269), drained (or 1 orange cut into sections plus 1/4 cup orange juice) |
2 tablespoon chopped fresh mint leaves or parsley |
2 tsp. grated orange zest |
Directions:
1. Combine the quinoa and water in a large saucepan and bring to a boil. Reduce the heat, cover, and simmer for 10 min. 2. Add the raisins and continue cooking until all the liquid has been evaporated, about 5 min. Remove the pan from the heat and spread the mixture out on a baking sheet. Let it cool completely. 3. In a large bowl, combine the quinoa and raisins with the remaining ingredients. Add salt to taste. Toss gently and serve. |
