Tried and true. These are incredible. I obtained them from an estate sale in 1988 and have made them on a regular basis since then. They are always a big hit when I make them. Hope you enjoy as much as I do. Ingredients:
2 cups all purpose flour |
1/4 cup granulated sugar |
1 tablespoon cornstarch |
2 teaspoons baking powder |
2 teaspoons ground cinnamon |
1/2 teaspoon salt |
1/4 teaspoon ground ginger |
1/4 teaspoon ground nutmeg |
2 large eggs separated |
1-3/4 cup milk |
1/2 cup pure pumpkin |
2 tablespoons butter melted |
3/4 cup chopped pecan |
pumpkin maple sauce |
1 cup maple syrup |
3/4 cup pure pumpkin |
1/4 teaspoon ground cinnamon |
Directions:
1. Combine flour, sugar, cornstarch, baking powder, cinnamon, salt, ginger and nutmeg. 2. Combine egg yolks, milk and pumpkin in medium bowl then mix well. 3. Add to flour mixture then stir in butter. 4. Beat egg whites in small mixer bowl until soft peaks form. 5. Gently fold into pumpkin mixture. 6. Preheat waffle iron according to manufacturer's directions. 7. Depending on size of waffle iron pour 1/2 cup to 1-1/2 cups batter onto hot iron. 8. Generously sprinkle with nuts then bake 5 minutes or until steaming stops. 9. Repeat with remaining batter and nuts then serve with sauce. 10. To make sauce heat maple syrup, pumpkin and cinnamon in small saucepan until warm. |
