Ingredients:
2 1/2 cups shredded green cabbage |
1 1/2 cups shredded red cabbage |
3/4 cup chopped sweet red pepper |
1 (8-ounce) can crushed pineapple in juice, drained |
1 cup nonfat sour cream alternative |
2 tablespoons sugar |
1 tablespoon dry mustard |
3 tablespoons cider vinegar |
1/8 teaspoon salt |
2 tablespoons unsalted dry-roasted peanuts, chopped |
Directions:
1. Combine cabbages and red pepper in a large bowl; toss well. 2. Combine crushed pineapple, sour cream, sugar, mustard, vinegar, and salt in a small bowl, stirring well. Add pineapple mixture to cabbage mixture, and toss until blended. Cover and chill. Sprinkle slaw with peanuts just before serving. |
