Nutty Loaf Cake...loaded with nuts. Ingredients:
4 oz. soft butter |
4 oz. caster sugar |
2 eggs |
1/2 tsp. vanilla essence |
8 oz. plain / wholemeal flour |
2 tsp. baking powder |
4 oz. of mixed nuts(almonds,pistachios,walnuts,etc.),roughly chopped |
2 oz. shredded coconut |
2 oz. of raisins |
1-2 tbsp. milk,if required |
glaze |
4 oz. icing sugar |
water,as required |
extra,chooped nuts and shredded coconut |
Directions:
1. Preheat the oven to 180° C.Grease an 8 x 4-inch loaf pan. 2. Sift flour with baking powder and salt.Mix nuts in the flour mixture.Keep aside. 3. Beat butter and sugar in a bowl until light and fluffy. 4. Beat in eggs,one at a time.Add vanilla. 5. Fold in the nuts and flour mixture,1/3 at a time. 6. Add milk,if the mixture is little thick and mix until evenly mixed. 7. Spoon the batter into the pan. 8. Bake for 30-40 minutes until cooked. 9. Turn out and cool on a wire rack. 10. Glaze: 11. Mix icing sugar with enough water to make a thick paste. 12. Drizzle glaze over cake,sprinkle chopped nuts on top.Let stand until set. 13. Cut in slices and serve. |
