A burst of sunshine in a muffin. Use your favorite nuts instead of the walnuts. Ingredients:
1 3/4 cups flour |
1 cup chopped walnuts |
1/3 cup sugar |
2 teaspoons baking powder |
2 teaspoons grated lemon zest |
1/2 teaspoon salt |
1 egg |
1/2 cup milk |
1 1/3 cups butter, melted |
1/4 cup sour cream |
3 tablespoons flour |
3 tablespoons sugar |
3 tablespoons chopped walnuts |
2 tablespoons butter, softened |
2 teaspoons grated lemon zest |
Directions:
1. For the muffins ~ mix the flour, walnuts, sugar, baking powder, lemon zest and salt in a large bowl. 2. Beat the egg with a fork in a small bowl; then add milk butter and sour cream to egg. 3. Add egg mixture to flour mixture and stir until just blended. 4. Fill greased muffin cups 2/3 full and sprinkle with streusel topping. 5. Bake at 400ยบ for 15 to 25 minutes or until a toothpick inserted in the center comes out clean. 6. Streusel topping: Combine the flour, sugar, walnuts, butter, lemon zest in a bowl and mix well. |
