Chilled salad of green beans, walnuts and feta. From The Onion Skin, August 2007. green beans, walnuts, red onion, feta cheese, olive oil, white wine vinegar, fresh dill, minced garlic, salt, pepper cvt Ingredients:
1 1/2 pounds fresh green beans, rinsed and cut in half |
1 cup chopped walnuts |
1 small red onion, thinly sliced |
4 oz feta cheese |
1/2 cup olive oil |
1/4 cup white wine vinegar |
1 tbs. chopped fresh dill |
1/2 tsp. minced garlic |
1/4 tsp. salt |
1/4 tsp. pepper |
Directions:
1. Steam green beans. 2. Toast walnuts at 350 degrees for 5-10 minutes. 3. Combine walnuts, beans, onions, and feta cheese. Toss and chill. 4. Combine dressing ingredients and pour mixture onto beans one hour before serving. |
