Nutty Flavored Fruit Salad |

Nuts are a good source of protein but they are also high in fat. This recipe uses just a hint of peanut butter for added flavor for a healthier fruit salad. Ingredients:
1 (8 ounce) can crushed pineapple in juice |
3/4 cup shredded carrot |
3/4 cup chopped celery |
1 cup chopped firm pear, unpeeled |
1/4 cup raisins or 1/4 cup dried cranberries |
1/3 cup plain low-fat yogurt |
2 tablespoons reduced-fat peanut butter |
1/4 teaspoon ground ginger |
Directions:
1. Drain pineapple and reserve juice. 2. In a large mixing bowl, combine pineapple, carrots, celery, pears and raisins. 3. In a small bowl, combine yogurt, peanut butter and ginger. Add pineapple juice sparingly to get a smooth consistency (about 1 tablespoon of juice). 4. Stir dressing into fruit to coat. 5. Cover and chill. |
