These muffins are easy to make and can be mixed in just two bowls, making cleanup speedy. This is a pleasant-tasting date muffin with a nice texture, compatible with many meals. Deborah Ader, Sullivan, Indiana Ingredients:
3/4 cup king arthur unbleached all-purpose flour |
1/4 cup sugar |
1 teaspoon baking powder |
1/2 teaspoon ground cinnamon |
1/8 teaspoon salt |
1/8 teaspoon ground nutmeg |
1 egg |
1/3 cup milk |
1/4 cup butter, melted |
1/4 cup chopped dates |
1/4 cup chopped pecans |
Directions:
1. In a bowl, combine the flour, sugar, baking powder, cinnamon, salt and nutmeg. In another bowl, whisk the egg, milk and butter; stir into dry ingredients just until moistened. Fold in the dates and pecans. 2. Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing to a wire rack. Yield: 6 muffins. |
