Great loaf for the holidays!!! Ingredients:
2 cups all-purpose flour, sifted |
1 cup sugar |
1-1/2 tsp. baking powder |
1 tsp. salt |
1/2 tsp. baking soda |
1/4 cup butter or margarine |
1 egg, beaten |
1 tsp. orange peel, grated |
3/4 cup orange juice |
1-1/2 cups fresh cranberries, chopped |
1/2 cup pecans or walnuts, chopped (optional) |
*confectioners' sugar for garnish |
Directions:
1. Sift flour, sugar, baking powder, salt and baking soda in a large bowl. 2. Cut in butter until mixture is crumbly. 3. Add egg, orange peel and orange juice all at once. 4. Stir just until mixture is evenly moist. 5. Fold in cranberries and walnuts. 6. Spoon into a 9 x 5 x 3 inch loaf pan. 7. Bake at 350 degrees for 1 hour and 10 minutes or until toothpick inserted in center comes out clean. 8. Remove from pan and cool on a wire rack. 9. Sprinkle with confectioners' sugar when cool. 10. Glaze: 11. 4 Tbsps. orange juice 12. 5 Tbsps. granulated sugar 13. 1 Tbsp. butter - NOT margarine 14. Combine the orange juice, sugar and butter in a saucepan. 15. Bring to a gentle boil. 16. Remove from heat and allow to cool before you drizzle over top of the loaf. 17. Let the loaf stand for 5 minutes. 18. Remove from the pan and cool completely on a wire rack. 19. Wrap and store for a day before serving. |
