this is good with a cup of coffee as an afternoon snack or with breakfast..anything with nuts and coconut is fine with me... this is a recipe from a Name Brands Cookbook... I don't know how many servings... it makes a 9-inch cake
Ingredients:
topping......
2 tbsp. melted butter
2/3 cup flaked coconut
1/3 cup packed dark brown sugar
1/3 cup chopped nuts ... your choice... macadamia, pecans, almond
2 tbsp. evaporated milk
batter...........
2 cups flour
1/2 cup packed brown sugar......i use light brown
1/4 cup white sugar
2 teasp. baking powder
1/2 teasp. salt
1/4 cup butter
1 cup evaporated milk
1 egg
1 teasp. vanilla
Directions:
1. TOPPING........ pour 2 TBSP. butter into ungreased 9-inch round cake pan
2. in bowl combine..... coconut, dark brown sugar, nuts, and 2 TBSP evaporated milk.
3. sprinkle over melted butter
4. ..............................................................
5. BATTER.....
6. combine in bowl.... flour, brown sugar, sugar, baking powder, and salt...... cut in 1/4 cup butter
7. in small bowl... beat i cup milk, egg, and vanilla together
8. stir into the flour mixture just until blended.... Do Not over mix
9. pour batter over the nut mixture
10. in preheated 350' F oven bake 30 -35 minutes or until a toothpick comes out clean
11. cook 10 minutes on wire rack
12. invert onto serving plate
