This was the recipe of the week featured in an email this morning from Gooseberry Patch. They just have the cutest things. Ingredients:
1 1/2 cups water |
1 acorn squash, halved and seeded |
2 tablespoons brown sugar, packed and divided |
2 teaspoons butter, divided |
salt, to taste |
pepper, to taste |
1/2 cup pecans, chopped, divided |
Directions:
1. Pour water into a 13 x9 baking dish; add squash cut-side down and bake at 350 degrees for 45 minutes or until tender. 2. Remove from pan; fill each half with one tablespoon brown sugar, one teaspoon butter, salt and pepper to taste and 1/4 cup pecans. 3. Return to oven and bake an additional 10 minutes. |
