Nutty Broccoli Stalk Mash |

I use as a side dish when I have used fresh broccoli florets for other recipes and hate to discard perfectly wonderful broccoli stalks. Add cooked pasta or rice for a main dish. Adapted from Shirley Sarvis' Jade Broccoli w/ Pecans appetizer. Ingredients:
3 1/2 t butter |
1/3 c chopped walnuts or pecans |
2 1/2 c finely chopped broccoli stalks (i cut 'em up and hit chop on food processor) |
2 t bacon or ham crumbled or finely chopped (1 strip bacon or 1 slice ham) |
sprinkle parmesan or blue cheese to top (optional) |
Directions:
1. Melt 1/2 T butter 2. Add walnuts or pecans & cook a couple minutes on low heat (careful not to burn) 3. Peel, chop & steam broccoli until tender (I usually do this in microwave only takes a minute or two) 4. While still hot stir in remaining butter and bacon or ham & nuts 5. Top w/ cheese (optional) 6. I use a scooper to present on plate |
