Serve this simple, nutty rice alongside your family's favorite chicken or pork dish. We preferred the flavor of curly leaf parsley in this recipe rather than flat-leaf parsley. Toast the walnuts while the rice simmers so the nuts can be stirred in when the rice is done. Ingredients:
1 (14-ounce) can fat-free, less-sodium chicken broth |
2 tablespoons light stick butter |
3/4 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
1 cup uncooked basmati rice |
1/4 cup chopped walnuts, toasted |
1/4 cup chopped fresh parsley |
Directions:
1. Bring first 4 ingredients to a boil in a medium saucepan. Add rice; cover, reduce heat, and simmer 18 minutes or until rice is tender and liquid is absorbed. Remove from heat; let stand, covered, 5 minutes. Add walnuts and parsley, and fluff with a fork. |
