Ingredients:
1 pound fresh asparagus spears |
vegetable cooking spray |
1 tablespoon lemon juice |
2 teaspoons reduced-calorie margarine, melted |
1 1/2 tablespoons coarsely chopped walnuts |
1/4 teaspoon salt |
1/8 teaspoon freshly ground pepper |
Directions:
1. Snap off tough ends of asparagus. Remove scales from stalks with a knife or vegetable peeler, if desired. Place asparagus in an 8-inch square baking dish coated with cooking spray. 2. Combine lemon juice and margarine; brush over asparagus. Sprinkle nuts, salt, and pepper over asparagus. Bake, uncovered, at 350° for 20 minutes or until asparagus is tender. |
