this cake not only looks good! you may want to vary the kind of nuts - pecan should go great with it, too. i like to serve it with freshly whipped cream slightly 'perfumed' with calvados! Ingredients:
200 gr flour |
100 gr sugar |
100 gr butter |
1 egg (large!) |
a pinch of salt |
2 pound apples (approx.) |
lemon juice |
2 eggs |
2 tbsp honey |
50 gr sugar |
1/2 teasp. cinamon |
1 dash of ground cloves |
1/2 teasp. vanilla sugar |
125 gr grated hazelnuts |
1 egg yolk |
1 tbsp milk |
Directions:
1. put flour, sugar and salt into mixing bowl 2. add butter in small pieces 3. add egg 4. knead with dough hooks of hand-held mixer until dough holds together - more or less - but is still 'crumbly' 5. place dough on work surface 6. lightly flour hands 7. quickly knead until smooth. 8. wrap in plastic foil and keep cool until needed 9. preaheat oven to 200°C 10. roll out dough thinly on baking paper 11. place springform on top 12. cut out dough to fit base 13. place cut-out base into greased springform, make holes with fork, 14. bake for about 15 minutes 15. remove pan, linne sides with remaining dough 16. quarter, peel and core apples, sprinkle with lemon juice 17. finely grate about 300 gr of apples for filling sprinkle with lemon juice 18. beat eggs, honey, sugars, cinamon, cloves and hazelnuts until foamy, stir in grated apples 19. fill the mixture into pan 20. place the remaining quartered apples closely together on top 21. (round part facing up) 22. mix egg yolk with mil and brush top of apples 23. bake cake about 40 to 45 minutes 24. remove, let cool and enjoy! 25. if you do not want to use whipped cream, some vanilla icecream always goes well with t his cake, especially if it is not totally cold! |
