Nuts and Berries Baked Oatmeal |

I know that there are similar recipes, but this my favorite version. Ingredients:
3 cups skim milk, plus more for serving if desired |
1 egg |
3 tablespoons brown sugar, packed (i also add a few packs of splenda) |
1 1/2 tablespoons butter, unsalted |
1/4 teaspoon salt (i use sea salt) |
1 teaspoon vanilla extract |
2 teaspoons ground cinnamon |
2 cups old fashioned oats (i use extra thick) |
1 1/2 cups unsweetened chunky applesauce |
1/2 cup dried cranberries, finely chopped |
1/2 cup walnuts, finely chopped |
Directions:
1. Preheat the oven to 350F degrees. 2. Coat a 10-13 in square pan with nonstick spray. 3. In a large saucepan, bring the milk, brown sugar, salt, butter to almost a boil, remove from heat and add vanilla and cinnamon. 4. Meanwhile, in a large mixing bowl, mix together the oats, apple sauce, cranberries, and nuts; spread evenly into the prepared pan. 5. Pour milk mixture evenly over the oatmeal mixture. 6. Bake uncovered for 30-35 minutes, ore until the liquid has been absorbed and the oatmeal is tender. 7. Cut the mixture into 6 servings, scooping each out into a cereal bowl. 8. Enjoy! |
