Nutmeg Zucchini

Prep: 3 minutes; Cook: 4 minutes. We used a food processor to shred the zucchini. A box grater or other hand-held grater works fine, too.
Ingredients:
1 tablespoon light butter
3 cups shredded zucchini (about 3)
1/4 teaspoon salt
1/4 teaspoon coarsely ground black pepper
1/8 teaspoon ground nutmeg
Directions:
1. Melt butter in a large nonstick skillet over medium-high heat. Add zucchini, and sauté 4 to 5 minutes or until crisp-tender. Stir in salt, pepper, and nutmeg.
