I love spice cookies and these fit the bill perfectly. Ingredients:
1 cup butter, softened |
3/4 cup sugar |
1/2 cup confectioners' sugar |
1 egg |
1 teaspoon vanilla |
2 1/2 cups flour |
1/2 teaspoon baking soda |
1/2 teaspoon cream of tartar |
1/4-1/2 teaspoon ground nutmeg |
1/8 teaspoon salt |
Directions:
1. In a mixing bowl, cream butter and sugars. 2. Beat in egg and vanilla. 3. Mix well. 4. Combine the flour, baking soda, cream of tartar, nutmeg and salt. 5. Add to the creamed mixture and mix well. 6. Refrigerate for 1 hour. 7. Shape into 3/4 inch balls, place 2 inches apart on greased baking sheets. 8. Flatten with a glass dipped in sugar. 9. Bake at 350 degrees for 10-12 minutes or until lightly browned. 10. Cool on wire racks. |
