Enjoy these nutmeg muffins straight from the oven. Land-O-Lakes Cookbook Ingredients:
1 1/3 cups all-purpose flour |
1 cup brown sugar, firmly packed |
1/2 cup butter or 1/2 cup margarine, softened |
2/3 cup all-purpose flour |
1 1/2 teaspoons baking powder |
1 1/2 teaspoons nutmeg |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
2/3 cup buttermilk |
1 egg |
Directions:
1. heat oven to 400*F. 2. in large bowl combine 1 1/3 cup flour and brown sugar, cut in butter until crumbly. reserve 1/2 cup for streusel topping. in same bowl add all muffin ingredients to streusel mixture, stir just until moistened. 3. spoon into greased 12 muffin pan. 4. sprinkle with reserved streusel mixture. 5. bake for 18 to 22 minutes, or until lightly browned. 6. let stand 5 minutes, and remove from pan. |
