Another one out of momma's recipe box. One of those cakes to pretend you were eating light. LOL Love the flavor of nutmeg, this is wonderful with a hot cup of tea. Ingredients:
2 1/4 cups of sifted cake flour |
3 tablespoons of baking powder |
1 tsp of fresh ground nutmeg |
1 tsp of salt |
2 cups of dark brown sugar (packed) |
1/2 cup of canola oil (mom used mazola vegetable oil) |
5 eggs separated |
3/4 cup of cold water |
2 egg whites |
1/2 tsp of cream of tartar |
Directions:
1. Sift first four ingredients into a bowl. 2. Combine brown sugar, oil, egg yolks and water, beat until smooth. 3. Add to dry ingredients, stir until smooth. 4. Beat all seven egg whites with the cream of tartar until stiff. 5. Gently fold the egg whites into the batter. 6. Pour into a greased and floured 10 inch tube pan. 7. Bake in a moderately slow oven (325 degrees) for 55 minutes. 8. Invert tube pan to cool completely before attempting to remove this tender cake. 9. The fresh ground nutmeg is a must. Canned won't cut it. |
