Something a little different. Ingredients:
3 cups chicken broth or 3 cups beef broth |
1/2 cup dry salted peanuts |
1/2 teaspoon chili powder |
1 cup milk |
salt and pepper |
Directions:
1. Bring broth to a boil. 2. Add the peanuts and cook for about 5 minutes over medium heat. 3. Pour into blender and add the chili powder, salt, and pepper. 4. Blend until smooth. 5. Pour into saucepan. 6. Rinse out the blender with the milk, then combine with the peanut mixture. 7. Return the pan to heat and bring to a boil again. 8. Serve hot with croutons or chilled with lemon or cucumber slices floating on top. |
