Nut Butter Pudding

This is a very simple yet tasty dessert. You can make it dairy free using soy, rice or nut milk, and you can use any sweetener you like. Also you can use any nut butter you wish - almond, cashew, hazelnut, peanut or even tahini. If using non-dairy milk you may have to decrease the liquid a bit or increase the starch. You can also add vanilla or cinnamon to taste. Serve with fruit sauce, e.g. apple sauce and raisins or cranberry sauce. Cooking time does not include refridgeration time.
Ingredients:
1 2/3 cups milk
1 1/4 ounces cornstarch
1 1/4 ounces sugar
3 1/2 ounces nut butter
Directions:
1. Dissolve cornstarch and sugar in 1/4 cup of the milk.
2. Bring remaining milk to a boil.
3. Slowly pour dissolved starch and sugar into boiling milk, stirring constantly with a whisk, until the whole mixture is incorporated.
4. Cook until mixture thickens, stirring constantly, then remove from heat and let cool a little, still stirring.
5. Fold in the nut butter, mix well and divide pudding into 3 small bowls.
6. Let cool, then refridgerate.
7. Serve with whipped topping, fruit sauce, pears in red wine or roasted plums.
