Ingredients:
1 1/2 teaspoon(s) baking soda |
1/4 cup(s) butter or margarine |
2 1/2 cup(s) dry roasted peanuts |
1 cup(s) light corn syrup |
1/2 teaspoon(s) salt |
2 cup(s) sugar |
1/2 cup(s) water |
Directions:
1. Butter sides of a heavy 3qt saucepan. In it combine sugar, corn syrup, water, butter or margarine, and salt. Cook and stir till sugar dissolves and mixture comes to boiling. Cook, stirring occasionally, to 275*(soft crack stage) and till syrup turns a golden color(mixture should boil gently over entire surface). Add nuts and continue cooking, stirring often, to 295* and still syrup is a clear golden color. Remove from heat. Quickly stir in soda. Immediately pour hot mixture into tow buttered 15x10x1inch pans or baking sheets. If desired, use two forks to lift and pull candy as it cools to stretch it thin. Cool, break into pieces. Makes about 2 1/4lbs. |
