This Greek , traditional , authentic , simple to make , perfect tasting , hungerhealing appetizer will blow your mind away .... Its origen is from the island of Santorini or Thyra , Cyclades Islands Complex , Greece . Read more . The original recipe needs Santorinian tomatinia ( a species of very small sized tomatoes , due to minimal irrigation because of water being scarce in those years ) and a Santorinian type of cheese . I have used regular tomatoes and Feta cheese for ease purposes ( shame on me .... ) . You fellow Chefs can use Italian pommodori and Italian Pecorino cheese as substitutes which will be the closest you will get to the original . Best enjoyed with some Vinsanto Santorinian wine while watching the world famous Santorinian Sunset ( voted internationally as the Most beautiful in the world , for more than 25 times ) !! I have pics of it under my avatar , chech it out .... Enjoy people ..... !! Ingredients:
2 large ripe but firm tomatoes , rinced , cut and discard seeds , diced |
1 large onion , peeled , rinced and finely diced |
200 gr original feta cheese , pressed broken with a fork |
1 fistful fresh parsley , rinced , finely chopped |
3 tbsp fresh spearmint , rinced , finely chopped ( or 2 dried ) |
1 tsp throubi or oregano |
1 egg |
1/2 tsp thyme |
1/2 tsp paprika |
salt and pepper to your taste , keeping in mind that feta is salty too |
1/2 cup extra virgin olive oil |
1 mug flour all purpose |
1 cup finely blendered dry bread crumbs |
olive oil for frying |
Directions:
1. In a bowl , mix all ingredients together ( except oil for frying , of course ) 2. thouroughly yet gently with a spoon until you get an almost non sticky brothy dough . 3. Do not knead , only stir !! 4. Preheat oil in your pan at a medium-high temp ( 7 out of 10 ) . 5. Dip your spoon in a glass of water that you have placed near you , and scoop some dough . 6. Gently let it down in oil and QUICKLY continue until pan is almost ful 7. By the time you have filled your pan , you should be turning the first one over to the other side . Anyway , fry until golden brown on both sides . 8. Place the fritters on oil-absorbing paper . 9. Serve hot and enjoy . 10. Kali orexi ( bon appetite ) !! |
