No salt added vegetable soup - Vegetarian - for extra low sodium diet Ingredients:
12 cups water |
2 large onions, diced |
2 cups celery |
1 cup parsnips |
6 large carrots |
8 oz mushrooms |
1 cup zucchini |
1 cup yellow squash |
2 cup winter squash |
4 oz ginger |
1 oz dill |
1/2 oz basil leaves |
1/2 oz rosemary |
Directions:
1. Put all ingredients into pot. 2. Heat to boiling then turn down to simmer. 3. Simmer for 2 - 3 hours. 4. Serve as is or puree. |
