Ingredients:
16 ounce kidney bean
16 ounce navy bean
1 red pepper
1 small onion
1 cup chopped zuchini
1 cup diced carrots
28 ounce diced tomatoes
4 cloves garlic
1/4 cup chili powder
2 teaspoon cumin
Directions:
1. Add all ingredients to slow cooker. Cook on high for approx 2 hours until vegetables are tender. Or cook on low for 3 -4 hours or until vegetables are tender. Adjust chili powder and cumin to taste may add jalapenos for extra hotness. May need to add 1/2 cup or so of water for a less thick chili.
2. Note you can dice or chop fresh tomatoes in place of canned diced tomatoes but you may need to add a little water to dish
