16 ounce kidney bean |
16 ounce navy bean |
1 red pepper |
1 small onion |
1 cup chopped zuchini |
1 cup diced carrots |
28 ounce diced tomatoes |
4 cloves garlic |
1/4 cup chili powder |
2 teaspoon cumin |
Directions:
1. Add all ingredients to slow cooker. Cook on high for approx 2 hours until vegetables are tender. Or cook on low for 3 -4 hours or until vegetables are tender. Adjust chili powder and cumin to taste may add jalapenos for extra hotness. May need to add 1/2 cup or so of water for a less thick chili. 2. Note you can dice or chop fresh tomatoes in place of canned diced tomatoes but you may need to add a little water to dish |
