Delicious banana bread. This is a DOUBLE recipe makes 2 loaves. Original recipe calls for shortening 1 cup for double recipe I didn't have so I sub butter instead. Ingredients:
3/4 cup butter |
1/2 cup sugar |
1 cup splenda |
1 whole egg |
3 egg whites |
6 bananas |
2 teaspoon baking soda |
1 cup flour |
1 cup ground almonds |
1 1/4 teaspoon vanilla extract |
2/3 cup walnuts |
4 tablespoon brown sugar |
2/3 cup walnuts |
Directions:
1. Cream butter or shortening if used with sugar, eggs (one at a time), vanilla, and bananas ( I usually use extra bananas at least 2-3 more). Set aside the 4 tablespoon of brown sugar and 2/3 cup walnuts for topping. In separate bowl mix dry ingredients and 2/3 cup chopped walnuts or pecans if you prefer. Divide between 2 well greased loaf pan 9x5x3. Push batter to corners leaving a slight hollow in center. Bake in 350* oven for 50 to 60 minutes or until done. Cool on wire rack and enjoy. |
