My favorite hot sipper to take in a Thermos to work. I believe it restores me and fights off the germs. Plus it is filling without being a caloric overload.
Ingredients:
4 cups of chicken stock, low sodium
1 can of light coconut milk
2 crushed cloves of garlic
4 quarter sized pieces of fresh ginger smashed
2 dried thai chili peppers, crushed
1 scant teaspoon of turmeric
1/2 teaspoon of powdered ginger
one stalk of lemon grass if you can find it
pounded to release the fragrance or
1 tbsp of lemon grass from the tube
Directions:
1. Steep garlic, ginger, lemon grass, and crushed chili peppers in simmering broth. 2. Add coconut milk and spices just to heat up. 3. Strain and pour in Thermos. Cap. 4. Sip!
